Crustless Cheesecake

Ingredients
  • 15 ounces extra firm silken tofu
  • 1/2 cup nonfat sour cream
  • 1 cup nonfat cream cheese
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 2/3 cup nonfat egg substitute
  • 3 tablespoons lemon juice
  • 2 teaspoons lemon peel
Preparation:
  • Preheat the oven to 350 degrees F. Spray a 9-inch cake pan with cooking spray.
  • Blend all ingredients together in a blender or food processor until very smooth. Pour into the prepared cake pan.
  • Place the filled cake pan in a large bake-proof pan filled with 1 inch of hot water. Bake until firm in the center, about 45 minutes.
  • Chill completely; cut in 10 slices and top with Plum Compote or fresh fruit.
