Ingredients
- 6 cups ready-to-serve romaine lettuce
- 1/2 cucumber, sliced
- 2 ripe tomatoes, cored and diced
- 1/4 cups red onions, chopped
- 3/4 cups boiled chicken breast, shredded
- 2 cups canned or boiled lentils, drained and rinsed
- 3 tablespoons lemon juice
- 1 teaspoons olive oil
- 1 tablespoons red wine vinegar
- 1/4 teaspoons black pepper
- 1/2 cups dried oregano
- 1 teaspoons fresh chopped mint (optional)
Preparation:
- Toss lettuce, tomatoes, onions and cucumbers, in large salad bowl. Top with lentils and chicken. Refrigerate until ready to serve.
- Toss with lemon juice, oil, and seasonings at service time.
