Greek Chicken Salad

Ingredients
  • 6 cups ready-to-serve romaine lettuce
  • 1/2 cucumber, sliced
  • 2 ripe tomatoes, cored and diced
  • 1/4 cups red onions, chopped
  • 3/4 cups boiled chicken breast, shredded
  • 2 cups canned or boiled lentils, drained and rinsed
  • 3 tablespoons lemon juice
  • 1 teaspoons olive oil
  • 1 tablespoons red wine vinegar
  • 1/4 teaspoons black pepper
  • 1/2 cups dried oregano
  • 1 teaspoons fresh chopped mint (optional)
Preparation:
  • Toss lettuce, tomatoes, onions and cucumbers, in large salad bowl. Top with lentils and chicken. Refrigerate until ready to serve.
  • Toss with lemon juice, oil, and seasonings at service time.
