Ingredients
- 1 cup green onion, sliced
- 1 cup carrots, sliced
- 1 cup green bell pepper, sliced
- 2 cups kale, chopped, prewashed
- 1 cup broccoli, chopped, frozen
- 1/4 cup peanuts
- 2 cups cooked brown rice
- 1/2 teaspoon garlic powder
- 2 tablespoons light soy sauce
- 1/4 teaspoon ground ginger
Preparation:
- Lightly spray a large, non-stick skillet with cooking spray. Heat over medium-high heat. Add the vegetables in the order listed.
- Cover pan and allow to sauté for a few minutes before stirring, allowing vegetables to turn golden brown.
- Sauté until vegetables are almost tender then add peanuts and seasonings. Serve over rice.
