Peanut Stir-Fry

Ingredients
  • 1 cup green onion, sliced
  • 1 cup carrots, sliced
  • 1 cup green bell pepper, sliced
  • 2 cups kale, chopped, prewashed
  • 1 cup broccoli, chopped, frozen
  • 1/4 cup peanuts
  • 2 cups cooked brown rice
  • 1/2 teaspoon garlic powder
  • 2 tablespoons light soy sauce
  • 1/4 teaspoon ground ginger
Preparation:
  • Lightly spray a large, non-stick skillet with cooking spray. Heat over medium-high heat. Add the vegetables in the order listed.
  • Cover pan and allow to sauté for a few minutes before stirring, allowing vegetables to turn golden brown.
  • Sauté until vegetables are almost tender then add peanuts and seasonings. Serve over rice.
