B. Smith Serves Up a Healthy
Italian Meal Down South

Atlanta resident Deborah Brown, who was diagnosed with type 2 diabetes in 2002, loves to cook and is especially partial to classic Italian foods, like lasagna. After her diagnosis, Deborah thought that cooking healthy, tasty meals for herself and for her husband, Chuck, who also has type 2 diabetes, would be a lifelong challenge. But a recent visit from B. Smith showed Deborah that, with a few small changes, she can manage her diabetes successfully while creating meals that are both flavorful and satisfying.

Deborah and B. whipped up Deborah’s favorite lasagna as a delicious main course using healthy ingredients, like whole-grain pasta and low-fat cheese. A side dish of roasted vegetables with creamy roasted garlic dressing complemented the meal. Finally, B. and Deborah rounded out the Italian theme with a dessert of tiramisu made with low-fat cream cheese and sugar-free whipped topping.

Diabetes in Georgia

Approximately 608,000 (9.1%) Georgian adults were diagnosed with diabetes in 2006 and an additional 304,000 adults are estimated to have undiagnosed diabetes. Diabetes was the seventh leading cause of death in Georgia in 2005 and the disease is estimated to cost over $4 billion per year in the area due to medical care, lost productivity, and premature death.
