B. Smith Gives Philadelphia a Healthy Twist on a Favorite Dish
B. Smith kicked off her Healthy Menu Makeover Program with a visit to historic Philadelphia.
B.’s first makeover participant was Joyce Stein, a Philadelphia resident who was diagnosed with type 2 diabetes in November 2006. Joyce’s husband also has type 2 diabetes, and, with her busy schedule, she found it challenging to make healthy meals for her family. Joyce signed up for a Healthy Menu Makeover to learn how to prepare healthy diabetes-friendly meals, especially for family gatherings and holidays.
Joyce chose shrimp scampi for her Healthy Menu Makeover, a family favorite that she rarely prepared because of its high fat content. B. showed Joyce how to make a healthier shrimp scampi by replacing much of the butter with healthy, flavorful ingredients, such as lemon juice and seafood stock. To increase the nutritional value of the meal, B. served the scampi over whole-wheat linguine and added plum tomatoes. And, because a favorite meal isn’t complete without a little something sweet, B. showed Joyce how to make a fresh, healthy dessert of grilled pineapple and low-fat coconut sorbet.

Diabetes in Southeastern Pennsylvania
The prevalence of diabetes among adults in Southeastern Pennsylvania has more than doubled over the past 13 years, increasing from 4.3% in 1991 to 9.4% in 2004. Almost 1 in 10 adults (over a quarter million people) in the region have diabetes. Southeastern Pennsylvania includes Philadelphia, Delaware County, Montgomery County, Bucks County, and Chester County, with a population of 3.8 million.
