Yields 4–6 servings
- Ingredients
- 1 pound extra-lean ground beef (<10% fat) or lean ground turkey
- 1 medium onion, diced
- 1/2 teaspoon salt or seasoned salt
- 1/4 teaspoon pepper
- 3/4 teaspoon Italian seasoning
- 1 14-oz can diced tomatoes with Italian herbs, drained, reserve liquid
- 1 cup shredded 75% light cheddar and/or part-skim or fat-free mozzarella
- 1 cup heart-healthy pancake mix
- 1/2 cup low-fat milk
- 1 4-ounce cup egg substitute
Directions
Preheat oven to 400 degrees F.
Spray a nonstick skillet with cooking spray, brown beef and onions together, add salt, pepper, 1/2 teaspoon Italian seasoning, and 1/2 can diced tomatoes.
Spray a round, oven-safe pie plate with cooking spray. Pour the meat mixture into the pie plate. Sprinkle the cheese over the meat mixture. Stir the pancake mix, egg substitute, remaining 1/4 teaspoon Italian seasoning, and milk together. Spoon the pancake mixture over the cheese. Bake for 25 to 30 minutes or until a knife inserted in the middle comes out clean.
While pie is baking, bring the rest of the diced tomatoes, the reserved liquid, and 1/4 teaspoon of Italian seasoning to boil. Remove from heat. When pie is ready, cut into slices, plate and spoon warm sauce over each portion.
To make it your own, add some peas, diced carrots, or red bell peppers.
NOTE: Be careful not to overcook the sauce
