Grilled Pineapple with Coconut Sorbet

Yields 4 servings

  • Ingredients
  • 1 large ripe pineapple, peeled, cored and sliced
  • 4 scoops coconut sorbet or sherbet (low-fat or fat-free, low-sugar or sugar-free)
  • ½ cup chopped pistachios (optional as garnish)

Directions
Preheat grill or indoor grill pan to medium high. Arrange the slices of pineapple on it, and cook 2 to 3 minutes per side, until golden brown. Transfer grilled pineapple to dessert plates and top each serving with a scoop of coconut sorbet or sherbet. Garnish with pistachios, if desired. (Serves 4)
