Grilled Sweet Potato Wedges

Yields 4 servings

  • Ingredients
  • 2 large sweet potatoes
  • 1 tablespoon olive oil or canola oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper

Directions
Scrub sweet potatoes thoroughly, but do not peel. Cut lengthwise in half, cut into 1/4 inch thick wedges.

Place in medium bowl and toss with the vegetable oil, salt, and pepper.

Place the wedges on the grill, being careful not to let them drop through. Cook over medium heat until golden brown, turning once, about 10 minutes. Serve warm, with ketchup if desired.
