PINEAPPLE-GLAZED SMOKED HAM WITH PINEAPPLE CLOVE SAUCE

Yields 28 servings

  • Ingredients
  • 6 pounds boneless applewood low sodium smoked ham
  • ¼ cup pineapple orange juice, reduced (6 oz can pineapple orange juice)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cloves
  • 1 teaspoon dry mustard, optional
  • 10-15 whole cloves

Directions
Heat ham according to package directions. Remove ham from the oven 30 minutes before it is done. Score ham with a sharp knife in diamond pattern ¼ inch deep, about 1 inch apart. Stick a clove in the center of each diamond.

Combine ¼ cup reduced juice with brown sugar, ground cloves, and mustard, if using. Mix well and brush over the outside of the ham. Continue baking the ham for 30 minutes, basting frequently. Let the ham stand at room temperature 10 to 15 minutes before slicing.

PINEAPPLE CLOVE SAUCE

  • 1 8-oz can crushed pineapple (in its own juice)
  • ½ to 1 teaspoon ground clove

In a nonstick skillet, add crushed pineapple and clove, stirring. Heat to a boil. Reduce liquid slightly. Place in a small, warm serving bowl. Spoon over sliced ham.
