Easy Split Pea Soup

Ingredients
  • 1 cups onion, chopped
  • 1 cups carrot, chopped
  • 3 celery stalks, chopped
  • 12 ounces dry split peas
  • 3 cups low-sodium chicken broth
  • 2 cups water
  • 1 bay leaf
  • 1 teaspoons dried thyme
  • 1 teaspoons dried oregano
  • 1/4 teaspoons black pepper
Preparation:
  • Place all ingredients in a large soup pot. Bring to a boil then reduce heat to simmer.
  • Cook, uncovered, until the peas are tender, about 45 minutes. Serve hot.
